Strawberry Chantilly
Inspired by the nostalgic strawberry shortcake ice cream bars everyone grew up chasing after from the ice cream truck, Strawberry Chantilly takes that creamy fruity flavor and turns it into an oversized bakery style cookie. The soft fluffy strawberry cookie is packed with real freeze dried strawberries and white chocolate chips, giving it a creamy strawberry milk flavor with a buttery vanilla finish.
What makes this cookie extra special is the whipped meringue folded into the dough, creating an airy texture that stays incredibly soft and light in the center. Each cookie is topped with silky strawberry Swiss meringue buttercream and finished with buttery pink and white strawberry crunch crumbles inspired by the coating on those classic strawberry shortcake bars.
For the signature pink color, we do use a small amount of organic food coloring to help bring the nostalgic strawberry crunch look to life.
